Tomato Sauce--how most of our canned tomatoes make it to the table!

Whenever we don’t have fresh tomatoes, this side dish finds a welcome spot on our table! We like it on cooked greens, as a side to beans, and on spaghetti, of course. Bold font indicates ingredients grown on the farm.

4 minced garlic cloves

1 medium onion, finely chopped or 1/2 cup chopped scallions

3/4 cup chopped green or colored sweet peppers

2-3 Tbs olive oil

1 quart cooked or canned chopped tomatoes with juice

1/2-1 cup tomato paste

2 Tbs fresh basil, finely chopped or 2 tsp dried

1 tsp oregano leaf

1 tsp Italian Seasoning (optional)

1 tsp salt or to taste

1 Tbs honey or other mild sweetener

  1. Sauté garlic in a small amount of water, then add onions and peppers and sauté until soft. (If preferred, sauté in olive oil)

  2. Add olive oil

  3. Add tomatoes and remaining ingredients

  4. Stir together and simmer for up to 1 hour to blend flavors.

Serve hot or cold.
