This method keeps all the flavor for you and ensures it doesn’t get lost in the “bath water”!

Learn how to DECREASE the glycemic index of boiled potatoes: https://nutritionfacts.org/video/glycemic-index-of-potatoes-why-you-should-chill-and-reheat-them/ ; and if you’re up to some scholarly reading: https://pubmed.ncbi.nlm.nih.gov/27655525/ , https://pubmed.ncbi.nlm.nih.gov/32201919/

Here’s what to do:

  1. Wash and trim potatoes (we rarely peel them)

  2. Place in kettle

  3. Add enough water to cook the potatoes till tender all the way through but no extra! This might take a bit of experimentation.

  4. Sprinkle on salt to taste

  5. Cover with lid, bring to boil, and cook at a medium high setting.

  6. Once the potatoes are done, remove the lid and boil any remaining water off—just don’t let them burn!

We enjoy these served with Sunflower Sour Cream!
