How to Bake Butternut, Acorn, or Buttercup Squash

We enjoy Butternut squash in several ways—baked in cubes, in pies, in soup etc—but our usual way to eat it is just plain baked on a tray. It’s also the simplest way to prepare it! You can use the same method for Acorn, Kabocha, and Buttercup squash.

  1. Wash squash and remove stem—using a large butcher knife to knock it off works well.

  2. Cut is half lengthwise with large knife. Note: microwaving the squash for a 2-4 minutes will soften it slightly and make it much easier to cut. It is recommended to perforate the skin with a fork before microwaving.

  3. Scoop out seeds with a spoon.

  4. Rub inside with olive oil (optional).

  5. Sprinkle with salt to taste.

  6. Bake, cut side down, on a baking tray at 350 degrees F for 1-1/2 hours. The taste is best when the juice starts to turn to syrup:)
